Canyon County is a county located in the state of Idaho. As of 2000, the population is 131,441. The county's county seat is Caldwell, Idaho6.

According to the U.S. Census Bureau, the county has a total area of 1,563 km² (604 mi²). 1,527 km² (590 mi²) of it is land and 36 km² (14 mi²) of it is water. The total area is 2.28% water.

As of the census2 of 2000, there are 131,441 people, 45,018 households, and 33,943 families residing in the county. The population density is 86/km² (223/mi²). There are 47,965 housing units at an average density of 31/km² (81/mi²). The racial makeup of the county is 83.10% White, 0.32% Black or African American, 0.85% Native American, 0.80% Asian, 0.13% Pacific Islander, 12.17% from other races, and 2.62% from two or more races. 18.61% of the population are Hispanic or Latino of any race.

There are 45,018 households out of which 39.80% have children under the age of 18 living with them, 60.70% are married couples living together, 10.10% have a female householder with no husband present, and 24.60% are non-families. 19.80% of all households are made up of individuals and 8.40% have someone living alone who is 65 years of age or older. The average household size is 2.85 and the average family size is 3.28.

In the county the population is spread out with 30.90% under the age of 18, 10.70% from 18 to 24, 28.30% from 25 to 44, 19.10% from 45 to 64, and 11.00% who are 65 years of age or older. The median age is 30 years. For every 100 females there are 98.70 males. For every 100 females age 18 and over, there are 96.30 males.

The median income for a household in the county is $35,884, and the median income for a family is $40,377. Males have a median income of $29,418 versus $22,044 for females. The per capita income for the county is $15,155. 12.00% of the population and 8.70% of families are below the poverty line. Out of the total population, 14.50% of those under the age of 18 and 10.70% of those 65 and older are living below the poverty line.
